Program Overview

The Pastry Arts program at Vancouver Community College (VCC) is a hands-on, career-focused training designed for those who dream of becoming professional pastry chefs. Whether you're passionate about cakes, chocolates, breads, or plated desserts, this program offers a solid foundation in classical techniques and modern presentation. Students are trained by award-winning instructors and work in state-of-the-art pastry kitchens on campus. This program is ideal for individuals who enjoy creativity, precision, and working in fast-paced environments like bakeries, hotels, or restaurants. Graduates will leave with the skills to enter the baking industry or continue into advanced training.

Program length: 1 year (full-time Diploma)

Program Structure

The Pastry Arts diploma program is structured to provide both foundational knowledge and practical experience. Over the course of 1 year, students learn pastry theory and master a wide range of techniques through hands-on training. The program includes:

  • Classical and contemporary baking techniques
  • Chocolate and sugar artistry
  • Viennoiserie (croissants, danishes, etc.)

Program Option:
