The Culinary Arts program at Red River College Polytechnic is designed to equip students with essential skills and knowledge for a successful career in the culinary industry. This program offers a comprehensive curriculum that combines both theoretical and practical learning experiences. Students will engage in hands-on training, preparing them to excel in various culinary settings. The program is structured to provide a solid foundation in culinary techniques, business skills, and food safety certifications, ensuring graduates are well-prepared for the demands of the industry.

Program structure

The Culinary Arts program is a two-year diploma that offers continuous enrollment with entry dates in January and September. The program is hosted at the Paterson GlobalFoods Institute, located in the Exchange District Campus of Winnipeg. Key features of the program structure include:

  • Two paid co-op work placements to gain real-world experience.
  • Combination of classroom-based theory and lab-based practice.
  • Optional one-year certificate exit for students who wish to complete their studies early.
  • Credit transfer opportunities for Levels 1 and 2 Apprentice Cook.
  • Accelerated ability to write the Red Seal Exam.

Students will also have the opportunity to obtain various certifications, including Food Handler Level 1, WHMIS, First Aid, and Fire Safety, enhancing their employability in the culinary field.
